In a saucepan put the sugar and water, dissolve the sugar on a med-high fire, do not stir. toast the pan when it changes into an amber colour, cook to your desire color (i like mine with a bitter sweet taste) turn the heat off. (be careful if you miss the timing you might burn the caramel) quickly pour the caramel in to the mold and spread it, set aside until ready to use. 2. In the same saucepan pour combine the milk, heavy cream, and sugar, stir and put it on low fire. keep stirring the mixture until it simmers about 60℃ then set it aside. 3. In a clean bowl combine the cream cheese and sugar using spatula, combine until smooth and creamy 4. Cracked in the 3 whole eggs and 3 egg yolks one at a time alter to mixing. 5. Gradually pour in the the milk mixture into the batter while continue whisking. 6. Strain the mixture couple of times then pour it in the mold with a sitted caramel inside, set aside. 7. For the genoise combine the eggs and the sugar and beat for 30 seconds, bane -marie and beat for 30 seconds then out of steam beat until light and fluffy. 8. Sift in the flour and incorporate well then gently pour into the tray. 9. In a baking dish with high sides that can hold your tray of custard, line a clean kitchen towel, put the custard tray in the center., bring a large pot of boiled water pour the water into the larger baking dish and around the ramekins. Avoid splashing water into your nicely filled custards! The water should come about halfway up the sides of the ramekins. 10. Bake in a preheated oven about 160℃ for 20 minutes. after 20 minutes cover tray using a foil in the middle of your custard cake and continue baking for 55 to 65 minutes, to check poke a stick in the center of the custard and halfway down; the stick should come out clean. Carefully remove the baking pan from the oven. 11. Remove the flan from the water bath, let it cool down, cover the custard using cling wrap and place to refrigerator to chill overnight. 12. Use a knife to run in the edge of the mold and flip the custard then serve.. Enjoy!
