Chhyachra or Chanchra (ছ্যাঁচড়া) is a bengali delicacy - a mishmash of vegetables made with pui shaak (known as malabar spinach) and fresh macher matha(or fish head) as the main ingredients — in this case we have used head of Rohu Fish, you can also use Katla/Hilsha. It is a very special recipe for Bengalis and is not missed from the lunch menu of most bengali weddings.
The basic technique to cook this dish is Stir, Cover and Cook by keeping the heat low as we are not supposed to add any extra water thereby allowing the vegetables to get cooked in their own juices.
Cooking this dish is not hard and can be made with readily available ingredients - but it is all about patience.

You need not think of any special occasion to make this dish, check your refrigerator for leftover vegetables and get a fresh fish head from the market and you will surely enjoy this delicious recipe.
